Whenever I make cookies for an event or just for the fun of it, I go to this recipe which I’ve used it for years. The addition of the rum extract gives the chocolate an extra pop of flavor that I really enjoy. These are easy to make and they’ll make you a superstar with the folks that try them.

1 cup of softened butter
1- 1/2 cup sugar
1-1/4 cup brown sugar
1 egg
1 egg yolk
1 teaspoon rum or rum extract
2-1/2 cups All Purpose Flour
1 teaspoon baking soda
1 teaspoon salt
1 cup large chocolate chips
1 cup small chocolate chips


Cream together the softened butter and sugars. Add the egg, egg ylk (it helps if they are room temperature) and the rum or rum extract. Sift together flour, baking soda and salt. Mix in chips. And if you would rather have nuts, swap out some of the chips. You can even add raisins or craisins. Scoop cookies onto a lined baking sheet and bake for 12-15 minutes.
